Easy Breakfast Recipes When You Are Running Late

Often breakfast falls low in the list of priority for many people especially when you're running late. But with little planning and only a handful of minutes to spare, you can have something to eat that can make a huge difference to your day. Breakfast is one of the most important meals of the day. It provides your body and brain with the fuel it needs to perform at its best after an overnight fast. You should ideally have your breakfast within two hours of waking. It should also provide you with at least 20 to 35% of your guideline daily allowance (GDA). By having a wholesome nutritious meal, you are going to be more efficient in just about anything and everything you do. Breakfast is even more important for growing kids, since their growing body needs regular refuelling. Studies show that kids who skip their breakfast are tardy and more absent from schools than children who eat breakfast on a regular basis.

Breakfast doesn't always need to be a cumbersome process. It can be as simple and quick as splashing some milk over cereal or making a healthy smoothie or oatmeal. If you are among those who are super busy and find it difficult to carve out time to eat before leaving the house, here are some breakfast ideas that can be prepared on-the-go when you are heading to your office.

Recipe Idea #1

Veggie Sandwich
Ingredients

  • 1 tbsp shredded Carrots
  • 1 tsp shredded beetroot
  • ½ tbsp capsicum
  • 1 cheese slice
  • 2 slice sandwich bread
  • Sauce to taste

Directions:
Keep a meal prep box in your fridge with shredded carrots, beetroot, capsicum, cheese slice.
To prepare the breakfast, take two slice of sandwich bread and layer it with shredded carrot, beetroot, and capsicum. Place a slice of cheese over it. Top your veggie sandwich with sauce.

Cheese Toast
Ingredients

  • 2 slice bread
  • 1 cheese slice

Directions:
Take two slice of bread. Stuff it with cheese slice, and sauce. This is an ultimate breakfast option when you have a long and tiring day ahead of you. Use a toaster for toasting your bread until its golden brown.

Recipe Idea #3

Raspberries Smoothies
Ingredients

  • 1 scoop plant based protein powder
  • 1 cup milk
  • ½ cup raspberries
  • 1 tsp wheat grass

Directions:
Place all the ingredients in the blender and blend until smooth. Drink immediately.
If you know your taste buds, you can just play around with variety of fruits and vegetables. Smoothies are quick to prepare and are quite healthy and nutritious.

Recipe Idea #4

Spring Tomato and Cheese Omelette
Ingredients

  • 2 eggs
  • ¼ cup milk
  • 1 tbsp butter
  • 1 tomato sliced
  • Salt and pepper to taste

Directions:
Take a small bowl and beat the egg. Add milk and pinch of salt and pepper as per your taste. Melt butter in a skillet over medium high heat. Add your egg and using a spatula spread it nicely. Place tomato over the egg and sprinkle a pinch of cheese. Remove the egg from the skillet once cooked.
